Southern Style Green Beans and Potatoes

Make green beans and potatoes now to enjoy as a side dish during the week. This is also ideal for pitch-ins and other gatherings!

Ingredients

1 medium onion, diced

2 cloves garlic, minced

1 tbsp olive oil

1 1/2 lb. green beans, trimmed and snapped in half

1 lb. new potatoes, quartered

1 c. additional chopped ham, optional

Salt and pepper, to taste

1 c. chicken broth

1 ham hock or leftover ham bone

Instructions

Add the olive oil to a Dutch oven set to medium heat. Once hot, add the onion and garlic. Cook for about 5 minutes until tender.

Then, add the greens beans followed by the broth and ham hock. Pour in the water enough to cover the beans. Let the mixture boil. Once boiling, decrease the heat and simmer for 35 to 45 minutes or until the beans are well cooked, and the cooking liquid is deep green/brown.

Add the potatoes and the extra ham (if using) after 20 minutes of simmering.

Take the ham hock or ham bone out of the pot and chop off the bone. Place the meat back, discarding the bone. To taste, sprinkle with salt and pepper.

Before serving, strain the cooking liquid with a slotted spoon.

Notes

You might not need to salt the dish as the ham tends to be very salty. Before seasoning, make sure to taste the dish first and adjust accordingly.
