Ingredients

2 1/8 cups (300g) all-purpose flour

1/2 tsp baking soda

1/2 tsp fine salt

1 cup (227g) unsalted butter, softened to room temperature

2/3 cup (130g) granulated sugar

3/4 cup (85g) powdered sugar

1 large egg

1 tsp pure vanilla extract

1/2 cup sprinkles (or up to 2/3 cup)


Instructions

Preheat your oven to 350°F/180°C. Prepare two baking sheets by lining them with parchment paper and set them aside.

In a bowl combine the flour baking soda and salt. Set this mixture aside.

Using a mixing bowl beat the butter, granulated sugar and powdered sugar together for 4 minutes until it becomes creamy.

Add the egg and vanilla extract to the mixture and blend until everything is well combined.

Gradually add the sifted ingredients into the mixture while mixing until all the ingredients come together.

Carefully fold in the sprinkles to ensure that they are evenly distributed throughout the dough.

Shape the dough into balls that are 1.5 tablespoons in size. Place these balls onto the baking sheets leaving 2 inches of space between each one.

Bake for around 11 to 12 minutes until you notice that the edges have turned a light golden color while keeping a soft center.

Allow the cookies to cool on the baking sheets for 5 to 10 minutes before transferring them onto a wire rack to cool completely.
