Ingredients

1 c. all-purpose flour

1 tsp. salt

1 tsp. baking powder

2 tbsp. sugar

1/2 tsp. cinnamon

2 large eggs

1/3 c. milk

1 tbsp. melted butter

1 1/4 c. diced peaches (approximately 2 fresh peaches)

Granulated sugar for coating

For Powdered Sugar Glaze:

1 c. powdered sugar

Milk (enough to make a drizzling consistency)


Instructions

In a mixing bowl combine 1 cup of flour, 1 teaspoon of salt, 1 teaspoon of baking powder, 2 tablespoons of sugar and half a teaspoon of cinnamon.

Next add 2 eggs, 1/3 cup of milk and 1 tablespoon of butter, to the dry ingredients. Mix everything together until you have a smooth batter.

Now gently fold in 1 and ¼ cups of peaches.

Heat up some oil to 375°F (190°C). Carefully drop in around a quarter to half a cup of the batter. Let it fry for 2 to 3 minutes until it turns brown.

Place the fried goodies, on some paper towels to drain any oil. You can then coat them with sugar. Even drizzle them with a glaze made from powdered sugar.

To construct a gluten-free rehash of this recipe simply supersede regular all-purpose flour with a gluten-free flour blend.
