3 c self-raising flour

1 teaspoon salt

1 c Greek or plain yogurt

1 tablespoon olive oil

30 grams butter, melted

2 garlic cloves, minced

1 teaspoon dried mixed herbs


Instructions

Prepare the Dough: Start by sieving the self-raising flour. And salt into a large mixing bowl. To remove any lumps. And evenly distribute the salt. Make a well in the center of the flour mixture. And add the Greek or plain yogurt. Along with the olive oil. Using your hands or a wooden spoon. Mix everything together. Until a soft dough forms. If the dough feels too sticky. Sprinkle in a bit more flour. If it seems too dry. Add a splash of water. Until you achieve the right consistency.

Shape the Dough: Divide the dough into 8 equal-sized balls. Lightly flour your benchtop. And rolling pin to prevent sticking. Take one dough ball at a time. And roll it out to approximately Β½ cm thick. Repeat this process with all the dough balls. Stacking them with a light dusting of flour between each one. To prevent sticking.

Cook the Flatbreads: Heat a frying pan or cast iron skillet over medium heat. Lightly grease the pan with a bit of olive oil. Or cooking spray. Place one of the rolled-out dough pieces into the pan. Cook for about 1-2 minutes. Until bubbles start to form on the surface. And the bottom turns golden brown. Flip the flatbread. And cook for another 30 seconds to a minute. Until both sides are nicely browned. And cooked through. Transfer the cooked flatbread to a plate. And cover with a clean towel. To keep warm. Repeat with the remaining dough.

Make the Garlic Butter: While the flatbreads are cooking. Melt the butter in a small saucepan. Or microwave-safe bowl. Stir in the minced garlic. And dried mixed herbs. Until well combined. Once all the flatbreads are cooked. Brush each one liberally with the garlic butter. While they are still warm. To allow the flavors to soak in. Serve immediately. And enjoy!
