Ingredients

Scale

1 orange

½ cup butter

¾ cup sugar

2 eggs (room temperature)

½ cup light cream or milk

1 ½ cups flour + 1 tbsp. for dusting cranberries

1 tsp baking powder

½ tsp salt

1 ¼ cups cranberries

Glaze:

2 tbsp. powdered sugar

2 tbsp. milk


Instructions

Preheat your oven to 350°F (175°C). Flour an 8×4 inch pan.

Grate the orange peel. Squeeze out 1 tablespoon of juice. Keep them aside.

Whisk together the sugar and butter until it becomes light and creamy. Then add the eggs and cream followed by stirring in 1 tablespoon of orange juice.

In a bowl combine the flour baking powder, salt and grated orange peel.

Gently incorporate the dry mixture into the butter mixture stirring until just combined.

Set aside 2 tablespoons of cranberries. Toss the remaining cranberries with 1 tablespoon of flour. Fold them into the batter. Pour the batter into the pan. Sprinkle with the reserved cranberries on top.

Bake for 50 55 minutes. Until a toothpick inserted comes out clean. Once done allow the bread to cool on a rack.

Prepare a glaze by mixing sugar with milk. Poke holes in the loaf using a toothpick or fork and drizzle the glaze over it. Let it cool completely before serving. Enjoy!

Notes

To make a gluten-free version of our Cranberry Orange Bread follow these adjustments:

Flour: Replace the 1 ½ cups of all-purpose flour with a high-quality blend specifically made for gluten-free baking. Look for blends that have xanthan gum or another binding agent included to replicate the texture of flour.

Xanthan Gum: If your chosen gluten-free flour blend doesn’t already contain xanthan gum you may want to consider adding ½ to 1 teaspoon of xanthan gum to the mixture. This addition will enhance the structure and elasticity of the bread.
