2 pounds ground chicken

1/2 small yellow onion, finely diced

3 cloves garlic, minced

1 large egg, beaten

1 tbsp Dijon mustard

1/2 c parmesan cheese, finely grated

2 tbsp fresh parsley, chopped

1 tsp salt

1/2 tsp black pepper

1 c panko breadcrumbs, divided

6 slices Black Forest ham

6 slices Swiss cheese

2 tbsp melted butter

For the Sauce:

2 tbsp butter

2 tbsp all-purpose flour

1 1/2 c milk

2 tbsp Dijon mustard

1/3 c parmesan cheese, finely grated


Instructions

Preheat Oven: Set your oven to 350Β°F and grease a loaf pan with butter or nonstick spray.

Mix Meatloaf Ingredients: In a bowl, combine ground chicken, diced onion, minced garlic, beaten egg, Dijon mustard, grated parmesan, chopped parsley, salt, pepper, and 1/4 cup of panko breadcrumbs. Mix until just combined.

Shape Meatloaf: Place the mixture on parchment paper and flatten it into an 8×12-inch rectangle. Layer with ham and cheese slices, then roll into a log.

Prepare for Baking: Transfer the meatloaf to the loaf pan, seam side down. Top with remaining breadcrumbs mixed with melted butter.

Bake: Bake for about 75 minutes, or until the internal temperature reaches 165Β°F.

Make Sauce: While the meatloaf rests, melt butter in a saucepan over medium heat. Whisk in flour, then gradually add milk. Cook until thickened, then stir in Dijon mustard and parmesan cheese.
