1 loaf challah bread, torn into strips or cubed (older bread works better in this recipe)

1 3/4 c half-and-half

1 c pecans, roughly chopped

4 eggs

3 tbsp brown sugar

2 tbsp unsalted butter

1 tbsp vanilla extract

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp sea salt

Caramel sauce (store-bought or homemade)


Instructions

Start by using a food processor to combine 2 tablespoons of butter and 3 tablespoons of sugar until they form a pebble-like texture. Add in 1 cup of chopped pecans. Mix well.

In a bowl whisk together 1 3/4 cups of half and half, 4 eggs, 1 tablespoon of vanilla extract, 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg and 1/4 teaspoon of sea salt.

Take a loaf of challah bread. Tear it into strips or cubes. Dip each piece, into the custard mixture to ensure they are evenly coated. If you’re preparing in advance cover the mixture. Refrigerate for at least 4 hours or overnight.

Prepare your slow cooker by greasing the inside with butter or nonstick spray.

Transfer the soaked bread into the slow cooker making sure to evenly distribute it. Sprinkle the sugar-coated pecans on top.

Set your cooker to LOW heat and cook for around 3 hours or, on HIGH heat for approximately 1 hour and a half. Stir occasionally until the bread is fully cooked through and the top turns brown.

Serve your toast on a plate drizzle it with caramel sauce and enjoy this homemade Caramel Pecan Slow Cooker French Toast while it’s still hot!

Notes

This gluten-free version of the Caramel Pecan Slow Cooker French Toast is incredibly easy to make! Just replace the challah bread with your gluten-free loaf making sure it has a firm texture to absorb the tasty custard. Make sure to double-check that all other ingredients, half and half, vanilla extract and caramel sauce are gluten-free.
