1 lb ground beef

1 sweet onion, minced

3 cloves garlic, minced

1 medium cabbage, chopped, core removed

3 c beef broth

2 ½ c tomato juice

2/3 c long grain white rice

1 tbsp Worcestershire sauce

28 oz canned tomatoes with chiles

1 tsp salt (adjust to taste)

Grated Parmesan for topping


Instructions

In a pot cook the ground beef on medium heat until it turns brown making sure to break it up as it cooks.

Add minced onion and garlic. Continue cooking until the beef is fully cooked.

Mix, in chopped cabbage, beef broth, tomato juice, rice, Worcestershire sauce canned tomatoes with chiles and salt.

Bring the mixture to a boil. Then reduce the heat to a simmer. Cover the pot. Let it cook for 25 minutes or until the rice becomes tender.

Taste the soup. Add salt if necessary.

Serve hot with a sprinkle of Parmesan cheese, on top.
