The main difference between this casserole and the ones we usually make is the use of Cream of Potato soup for the more common Cream of Chicken soup. It added largely to the casserole’s rich texture and flavor. To be honest, I prefer using freshly grated Parmesan cheese, but if that’s not an option, canned grated Parmesan would work just well.

Step 1: Set oven temperature to 375 degrees F. Prepare a 9-by-13-inch baking dish by spraying it lightly with cooking spray.

- 2 c. shredded sharp Cheddar cheese
- 1 lb cooked diced ham
- 1 32-ounce package of frozen hash brown potatoes
- 1 16 ounces container of sour cream
- 1½ c. grated Parmesan cheese
- 2 10.5 ounces cans condensed cream of potato soup
Instructions
- Turn the oven on to 375oF. Use cooking spray to lightly grease a 9-by-13-inch baking dish.
- Mix hash browns, ham, cream of potato soup, sour cream, and cheddar cheese together in a large bowl. Spread into a pan that has been lightly greased. Add some Parmesan cheese on top.
- Bake uncovered for 1 hour, or until bubbly and lightly browned.
