Steps To Make Decadent Chocolate Nirvana Doughnuts:
Step 1: Start by combining the cake flour, cocoa powder baking powder, salt, and nutmeg in a bowl. In a stand mixer fitted with the paddle attachment. Blend the butter and sugar. Until it looks like sand. Next, incorporate the egg yolks. Beat until the mixture becomes pale and thick. Slowly add the dry ingredients and sour cream. Beginning and ending with the flour. The dough will be sticky. Refrigerate it wrapped in plastic for an hour. To firm up slightly.
Step 2: On a floured surface. Roll out the dough to 1/2 inch thickness. Use a donut cutter to shape the donuts. Rerolling any scraps as necessary. If the dough sticks to your cutter, no worries. They will puff up nicely when fried.
Step 3: Heat 2 inches of canola oil in a pot to 325°F. Fry the donuts in batches. Without overcrowding them. Each side should take around 2 minutes. To achieve a brown color. Place them on a paper bag after frying to absorb any oil.
Step 4: To make the glaze. Whisk together all ingredients until smooth. Dip each donut into the glaze. Allowing any extra glaze to drip off. Place them on a wire rack to cool down for 20 minutes.
Tip:
When frying these Chocolate Dream Doughnuts. It’s important to keep the oil temperature steady at 325°F (163°C). If the oil is too hot. The doughnuts might get too dark on the outside but raw. If it’s too cool. They could end up greasy from absorbing oil. Use a fry thermometer to watch the temperature. Adjust the heat as needed while frying. This way, your doughnuts will turn out perfectly golden. Cooked to perfection every time. Crispy outside and soft inside.
