White Chocolate Blondies

These White Chocolate Blondies are rich, buttery, and filled with white chocolate chips for a sweet, chewy dessert that is simple to prepare and irresistibly delicious.

Ingredients

  • 1 cup 226g unsalted butter, melted and slightly cooled
  • cups 300g light brown sugar, firmly packed
  • 2 large eggs plus 1 egg yolk at room temperature
  • 2 teaspoons vanilla extract
  • 2 cups 250g all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • cups 255g white chocolate chips, divided

Instructions
 

Prepare the Baking Pan:

  1. Preheat the oven to 350°F (175°C). Line a 9×9-inch square baking pan with parchment paper, leaving an overhang on the sides to assist with removal. Set aside.

Mix the Wet Ingredients:

  1. In a large microwave-safe bowl, melt the butter and allow it to cool slightly. Add the light brown sugar to the butter and whisk vigorously until fully combined and no lumps remain. Whisk in the eggs, additional yolk, and vanilla extract until the mixture is smooth.

Combine the Dry Ingredients:

  1. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt.

Form the Batter:

  1. Gradually incorporate the dry ingredients into the butter mixture using a spatula. Stir gently until nearly combined. Add 1 cup of the white chocolate chips and continue mixing until no streaks of flour remain.

Bake the Blondies:

  1. Pour the batter into the prepared baking pan and smooth the top evenly with a spatula. Sprinkle the remaining ½ cup of white chocolate chips evenly across the surface. Bake for 30–35 minutes, or until the top is shiny and crackly and a toothpick inserted into the center comes out with only a few moist crumbs.

Cool and Serve:

  1. Allow the blondies to cool completely in the pan. Once cooled, lift them out using the parchment paper overhang and cut into squares for serving.

Notes

To prepare gluten-free White Chocolate Blondies, substitute the all-purpose flour with a high-quality 1-to-1 gluten-free baking flour blend. Ensure that the baking powder and white chocolate chips are certified gluten-free as well for best results.
