Ingredients

  • 1 tablespoon olive oil
  • 8 medium carrots sliced
  • 2 large onions chopped
  • 4 celery ribs chopped
  • 1 large green bell pepper seeded and chopped
  • 1 garlic clove minced
  • 2 cups chopped cabbage
  • 2 cups frozen cut green beans about 8 ounces
  • 2 cups frozen peas about 8 ounces
  • 1 cup frozen corn about 5 ounces
  • 1 can 15 ounces garbanzo beans (chickpeas), rinsed and drained
  • 1 bay leaf
  • 2 teaspoons chicken bouillon granules
  • 1 ½ teaspoons dried parsley flakes
  • 1 teaspoon salt
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • ½ teaspoon dried basil
  • ¼ teaspoon black pepper
  • 4 cups water
  • 1 can 28 ounces diced tomatoes, undrained
  • 2 cups V8 juice

Sauté the Aromatics

  1. In a large stockpot, heat the olive oil over medium-high heat. Add the carrots, onions, celery, and green bell pepper and sauté until the vegetables become tender, approximately 5–7 minutes. Stir in the minced garlic and cook for an additional one minute, ensuring it becomes fragrant without burning.

Incorporate the Remaining Ingredients

  1. Add the garbanzo beans, cabbage, frozen green beans, frozen peas, frozen corn, bay leaf, and seasonings (chicken bouillon, parsley, salt, marjoram, thyme, basil, and black pepper) to the pot. Pour in the V8 juice, diced tomatoes, and water, stirring thoroughly to distribute the flavors evenly.

Simmer the Soup

  1. Increase the heat to bring the soup to a gentle boil. Once boiling, reduce the heat to low, cover, and allow the soup to simmer for 1 to 1.5 hours, stirring occasionally. This will allow the flavors to meld and the vegetables to fully soften.

Final Adjustments and Serving

  1. Once the vegetables have reached the desired tenderness, remove the bay leaf and discard it. Taste the soup and adjust the seasoning if necessary. Serve the soup warm, optionally garnishing with fresh parsley or grated Parmesan cheese.
