Ingredients

  • 18.4 ounces box of brownie mix plus the additional ingredients required to prepare them as indicated on the box OR choose homemade brownies
  • 1 pack 15.25 ounces of Mint Oreos (to be divided)
  • 2 packs 4.67 ounces each of Andes Mints, which is about 56 unwrapped mints

Instructions
 

  1. Start by greasing a 9-inch baking pan with butter.
  2. Next, arrange a layer of Mint Oreos evenly on the bottom of the pan. If you have any remaining Oreos chop them up. Set them aside for later use.
  3. Follow the instructions, on the brownie mix package to prepare the batter. If you prefer make it from scratch. Pour the batter over the Oreos in the pan.
  4. Bake until a toothpick inserted into the brownies comes out with a few crumbs clinging to it.
  5. Baked, place Andes Mints, on top of the brownies. Return them to the oven for about 2 minutes to allow them to slightly melt. Take a knife. Spread them evenly across the surface.
  6. To add some flavor and texture sprinkle chopped Mint Oreos over the melted mints.
  7. Allow the brownies to cool for an hour before slicing and serving. Enjoy this treat!

Notes

To make these Ultimate Mint Brownies gluten-free, opt for a gluten-free brownie mix or use almond/coconut flour as a base. Swap in gluten-free "Oreo"-style cookies, and ensure your mint chocolates don't contain hidden gluten. Simple tweaks let you enjoy the minty, chocolaty goodness without the gluten!
