Notes

Embrace the joy of inclusive baking by adapting our beloved Toffee Butter Icebox Cookies for those who follow a gluten-free lifestyle. Swap the all-purpose flour with your favorite gluten-free flour blend – one that mirrors the texture and binding qualities of traditional flour. A 1:1 gluten-free baking flour is ideal, ensuring your cookies maintain their cherished structure and mouthfeel. Be sure to select a blend that includes xanthan gum, the magic ingredient that mimics gluten’s elasticity. Also, double-check that your Heath toffee bits are gluten-free, as some brands may contain gluten.
