This Tamale Pie Recipe brings together. All the comforting flavors of a traditional tamale. But in a much easier-to-make form. The filling is made with seasoned ground beef. Bell peppers, onions, and enchilada sauce. While the top is a soft. And slightly sweet cornbread layer. The melted cheddar cheese throughout. Adds creaminess. While the slight crunch of the baked cornbread crust. Gives each bite. A perfect texture. It’s a Tex-Mex dream come true. In casserole form. Ideal for busy weeknights. Or family gatherings!

Ingredients

  • 1 lb lean ground beef
  • 1 onion finely chopped
  • 1 bell pepper diced (use either green or red)
  • 2 garlic cloves minced
  • 2 tbsp taco seasoning
  • 1/4 c water
  • 3/4 c enchilada sauce
  • 2 c shredded cheddar cheese divided

For the topping:

  • 1 box 8.5 oz corn muffin mix
  • 1/2 c sour cream
  • 1/2 c corn kernels canned, fresh, or frozen
  • 1/3 c milk
  • 1 egg
  • Fresh cilantro chopped for garnish

Instructions
 

  1. Preheat your oven to 350ºF.
  2. In a 10-inch oven-safe skillet. Cook the ground beef. With the onion, bell pepper, and garlic. Over medium heat. Until the beef is browned. And fully cooked through. Drain any excess fat.
  3. Stir in the taco seasoning. And 1/4 cup of water. Letting it simmer. Until the liquid has evaporated. Mix in the enchilada sauce. Scatter 1 1/2 cups of shredded cheese. Over the top.
  4. In a separate bowl. Combine the corn muffin mix and sour cream. Corn, milk, and egg. Spread this mixture evenly. Over the beef mixture.
  5. Sprinkle the remaining cheese on top. And bake for 35-40 minutes. Or until the top is golden. And cooked through.
  6. Garnish with fresh cilantro. And serve.

Notes

To make this Tamale Pie gluten-free. Simply swap the corn muffin mix. With a gluten-free version. Available in most grocery stores. Ensure your taco seasoning. And enchilada sauce. Are also gluten-free. As some brands may contain hidden gluten. You can even make your own taco seasoning. Using a mix of spices like cumin, paprika, and chili powder. With these easy substitutions.
