Ingredients

  • 1 pre-made pie crust
  • 1 stick unsalted butter
  • 3 large eggs
  • 1/4 c granulated sugar
  • 1 c packed brown sugar
  • 1/2 c corn syrup
  • 1 tbsp milk
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp all-purpose flour
  • 1/2 c toffee bits
  • 2 c finely chopped pecans

For the Streusel Topping:

  • 1/2 c all-purpose flour
  • 1/4 c packed brown sugar
  • 1/4 c cold unsalted butter

Instructions
 

  1. Preheat the oven to 400°F. And place an empty baking sheet. On the center rack to heat.
  2. Prepare the pie crust. By placing it. In a pie pan. Then chill it. In the fridge. While you make the filling.
  3. In a small saucepan. Melt the butter. Over medium heat. Until it turns golden brown. And smells nutty. About 5 minutes. Remove from heat. And let it cool.
  4. In a stand mixer. Beat the eggs. For about 2 minutes. Until light and airy. Gradually add the granulated sugar. Brown sugar, and corn syrup. Mixing well. Stir in the cooled butter. Then add the milk and vanilla. Salt, lemon juice, and flour. Making sure everything. Is well combined. Gently fold in the chopped pecans. And toffee bits. Pour the mixture. Into the chilled pie crust.
  5. Place the pie. On the preheated baking sheet. And immediately lower. The oven temperature to 350°F. Bake for 30 minutes.
  6. While the pie bakes. Make the streusel topping. By mixing the flour. And brown sugar. Cut in the cold butter. Until the mixture resembles coarse crumbs. Keep chilled. Until ready to use.
  7. After 30 minutes. Remove the pie. From the oven. And sprinkle the streusel. Evenly over the top. Cover the edges of the pie. With foil. To prevent over-browning. Then bake for another 30-40 minutes. Until the center is just set. But still a little wobbly.
  8. Let the pie cool completely. On a rack before serving. For best results. Make it a day ahead.

To make this pie gluten-free. Simply swap the premade pie crust. With a gluten-free alternative. Most grocery stores carry excellent options. Or you can make your own.
