This Sweet Apple Pinwheel Cobbler is pure comfort in a baking dish!   • 1 1/2 c brown sugar divided
  • 1 1/2 c water
  • 3/4 c butter divided
  • 1 1/2 c self-rising flour
  • 1/3 c milk
  • 2 Granny Smith apples peeled and finely chopped
  • 1 tsp ground cinnamon
  • 1/8 tsp ground cardamom
  • 1/8 tsp ground ginger

Instructions
 

  1. Preheat your oven to 350°F. In a small saucepan, combine the water and 1 1/4 c of brown sugar. Warm it over medium heat, stirring gently, for about 3-5 minutes until the sugar fully dissolves into a sweet syrup. Set this aside for later.
  2. Place 1/4 c of butter in a 9-inch round baking dish with deep sides. Pop the dish in the warm oven just until the butter melts, then take it out and set it aside. That buttery base will add richness to the cobbler!
  3. Next, grab your food processor and pulse together the remaining butter and flour until it resembles a sandy texture. Add the milk and pulse again just until the dough starts to come together—it should be soft but still hold its shape. Turn the dough out onto a floured surface and roll it into a rectangle, about 10x14 inches.
  4. In a bowl, mix the chopped apples with the remaining sugar, cinnamon, cardamom, and ginger. Spread the apple mixture evenly across the dough, making sure it’s all covered and you get some apple goodness in every bite. Starting with the long side closest to you, gently roll up the dough into a log, keeping it nice and tight as you go. Slice it into 10-12 pieces.
  5. Place each pinwheel slice flat in the baking dish. Pour the syrup you made earlier over the top, making sure each piece gets a bit. Bake for 40-45 minutes, or until the tops are golden brown and the dough is fully cooked. Let the cobbler cool for about 20 minutes before serving—it’ll be gooey and perfect!

Notes

Making this cobbler gluten-free is super simple! Just swap out the self-rising flour for a gluten-free all-purpose flour blend, and add 1 1/2 teaspoons of baking powder to keep that rise in the dough. Also, double-check that your spices are certified gluten-free, as some can contain fillers.
