Ingredients

  • 2 big sweet potatoes peeled and cut into cubes
  • ½ c honey
  • ¼ c olive oil
  • 2 tbsp ground cinnamon
  • 1 tbsp honey or more, if you want it a bit sweeter!

Instructions
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the cubed sweet potatoes with ½ cup of honey and the olive oil until every piece is well-coated. Spread the sweet potatoes out in a single layer on a baking sheet, making sure to drizzle any leftover honey-oil mixture on top for extra flavor.
  3. Pop the potatoes into the oven and bake for about 25-30 minutes, or until they’re tender and golden. Allow them to hang out on the baking sheet for roughly 5-10 minutes to chill down a bit. Once they’ve cooled a bit, sprinkle them with cinnamon. Finally, move the sweet potatoes to your dishes and drizzle with the remaining honey. Enjoy!
