These Strawberry Cream Cheese French Toast Roll Ups combine soft bread, sweet cream cheese, and fresh strawberries, all rolled and pan-fried until golden—perfect for breakfast, brunch, or a cozy weekend treat.

Ingredients

  • 12 slices white sandwich bread crusts removed
  • 4 oz cream cheese softened
  • ½ pint fresh strawberries rinsed, stemmed, and finely chopped
  • 2 large eggs
  • ½ cup whole milk
  • 3 tsp granulated sugar divided
  • ¼ tsp ground cinnamon
  • ¼ cup powdered sugar for garnish
  • 1 tsp vanilla extract optional, for added flavor

Prepare the Filling

  1. Begin by washing and stemming the strawberries. Chop them finely and set aside. In a small microwave-safe bowl, warm the cream cheese for approximately 10 seconds to soften. Stir in the powdered sugar until smooth and well combined.

Assemble the Roll Ups

  1. Using a rolling pin, flatten each slice of bread until thin. Spread approximately one teaspoon of the sweetened cream cheese mixture along one edge of the bread slice. Place a small spoonful of chopped strawberries on top of the cream cheese.

Roll the Bread

  1. Starting at the edge with the filling, gently roll each bread slice into a tight cylinder. Ensure the seam is on the bottom to prevent unrolling.

Make the Egg Mixture

  1. In a shallow bowl, whisk together the eggs, milk, 2 teaspoons of the granulated sugar, ground cinnamon, and vanilla extract if using. Set aside.

Cook the Roll Ups

  1. Preheat a nonstick skillet over medium heat. Lightly grease if desired. Dip each roll up quickly into the egg mixture, ensuring it is coated on all sides, then place seam-side down into the pan. Cook each roll for 2–3 minutes, turning until all sides are golden brown and slightly crisp.

Serve and Garnish

  1. Transfer the cooked roll ups to a serving plate. Sprinkle with the remaining 1 teaspoon of granulated sugar or powdered sugar and garnish with any leftover chopped strawberries. Serve warm.

Notes

To make this recipe gluten-free, simply substitute the regular sandwich bread with a gluten-free version that rolls well (preferably soft and fresh). Ensure all other ingredients—especially powdered sugar and vanilla extract—are labeled gluten-free to avoid cross-contamination.
