This Strawberry Bread features a tender crumb filled with fresh strawberries and topped with a sweet strawberry glaze. Perfect for breakfast, dessert, or afternoon tea.

Ingredients

Bread

  • ¾ cup granulated sugar
  • ½ cup vegetable oil
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 cups all-purpose flour
  • 2 cups fresh strawberries diced
  • 2 tablespoons all-purpose flour for coating strawberries

Glaze

  • 2 cups powdered sugar
  • 2 tablespoons melted butter
  • cup finely diced strawberries
  • ½ teaspoon vanilla extract
  • 1 –2 tablespoons heavy cream

Instructions
 

Preheat the oven

  1. Set the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.

Prepare wet ingredients

  1. In a medium mixing bowl, combine the sugar, oil, milk, egg, and vanilla extract. Stir until smooth.

Prepare dry ingredients

  1. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.

Coat strawberries

  1. In a small bowl, toss the diced strawberries with two tablespoons of flour. This prevents the fruit from sinking during baking.

Fold into batter

  1. Gently fold the flour-coated strawberries into the batter. Pour the mixture into the prepared loaf pan.

Bake

  1. Bake in the preheated oven for 50–55 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to cool for 10 minutes in the pan before transferring it to a wire rack to cool completely.

Prepare the glaze

  1. In a small bowl, whisk together the powdered sugar, melted butter, diced strawberries, vanilla, and enough cream to achieve a smooth, pourable consistency.

Glaze and serve

  1. Spread the glaze evenly over the cooled bread. Slice and serve.

Notes

To prepare gluten-free Strawberry Bread, substitute the all-purpose flour with a 1:1 certified gluten-free flour blend. Ensure that the baking powder and powdered sugar are also labeled gluten-free, as some brands may contain additives.
