Ingredients

  • 2 15-ounce cans chickpeas, rinsed and drained
  • 1 red bell pepper diced
  • 3 tbsp diced shallot
  • 1 large celery stalk diced
  • ¼ c golden raisins
  • 3 tbsp chopped cilantro
  • 2 tbsp slivered almonds

For the Dressing:

  • ½ c mayo
  • 1 ½ tbsp lime juice
  • 2 tbsp curry powder
  • ½ tsp garlic powder
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions
 

  1. Prep the chickpeas: Drain. And rinse the chickpeas. To remove any excess liquid. Then transfer them. To a large bowl. Use a fork. Or potato masher. To mash them slightly. Aim for a mix of mashed chickpeas. And some that remain whole. Which gives the salad. A great texture.
  2. Add the veggies: To the mashed chickpeas. Add the diced red bell pepper, shallots, celery, golden raisins, cilantro, and slivered almonds. These ingredients bring a mix of sweetness and crunch. And freshness. To balance out the chickpeas.
  3. Make the dressing: In a small bowl. Whisk together the mayonnaise, lime juice, curry powder, garlic powder, and honey. And a pinch of salt. And pepper. Stir until everything. Is well combined. And smooth.
  4. Combine and toss: Pour the dressing. Over the chickpea. And vegetable mixture. And gently toss. Until all the ingredients. Are evenly coated. In the creamy curry dressing. Make sure every bite. Has a little bit of everything!
