Spicy Black Bean Toast

A simple Spicy Black Bean Toast made with seasoned black beans, toasted whole-grain bread, and melted cheese, finished with your choice of fresh toppings.
6 Servings

Ingredients

  • 1 15-ounce can black beans drained and rinsed
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon kosher salt
  • 6 large slices whole-grain bread 1/2-inch thick and toasted
  • 1 1/4 cups shredded Monterey Jack or sharp cheddar cheese
  • Optional toppings: sour cream, diced avocado, pico de gallo, pickled red onions

Instructions

Preheat the oven

  1. Preheat the oven to 425°F (218°C). Line a baking sheet with parchment paper or foil for easier cleanup.

Prepare the bean mixture

  1. Place the black beans in a medium mixing bowl. Add the olive oil, cumin, smoked paprika, oregano, and salt. Stir to combine, then use the back of a fork to lightly smash the beans until partially mashed and spreadable.

Assemble the toasts

  1. Arrange the toasted bread slices on the prepared baking sheet. Divide the seasoned black bean mixture evenly among the slices, spreading it to cover the surfaces. Top each slice with shredded cheese.

Bake

  1. Bake for 12–15 minutes, or until the cheese is fully melted and bubbling.

Finish and serve

  1. Remove from the oven and garnish with optional toppings as desired. Serve immediately while warm.
