Ingredients

Chili:

  • 2 cloves garlic minced
  • 1 medium yellow onion diced
  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 15-ounce can kidney beans, drained
  • 1 15-ounce can black beans, drained
  • 1 15-ounce can petite diced tomatoes, with juices
  • 1 15-ounce can pumpkin purée
  • 1/2 6-ounce can tomato paste (about 5 tablespoons)
  • 2 cups water

Chili Seasoning:

  • 1 tablespoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon freshly cracked black pepper
  • 1 teaspoon salt

Instructions
 

  1. Start by mincing the garlic and chopping up the onion. Grab a large pot, add the garlic, onion, and olive oil, and heat it over medium. Let everything cook for about 5 minutes, stirring occasionally, until the onions turn soft and start to smell amazing.
  2. Next, add the ground beef to the pot. Break it apart with your spoon and cook until it's browned and no longer pink.
  3. Now, it’s time to throw in the rest! Add the drained kidney beans, black beans, diced tomatoes (with all their juices), pumpkin purée, tomato paste, water, and all your spices—chili powder, smoked paprika, cumin, garlic powder, onion powder, pepper, and salt. Give everything a nice stir to make sure it’s all blended together.
  4. Pop the lid on the pot and let the chili come to a nice simmer. Let it bubble away for about 30 minutes, stirring every now and then to make sure it doesn’t stick.
  5. Once the 30 minutes are up, give it a taste. Does it need a little more salt? Adjust if necessary. Then, serve it up hot with your favorite toppings—sour cream, shredded cheese, green onions, or even some crunchy corn chips!
