Ingredients

For the Filling:

  • 9 c peaches sliced into thin wedges (about 8 fresh peaches, or 3 lbs)
  • 1 tbsp lemon juice
  • 1/2 c granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp cornstarch
  • 1/2 tsp salt

For the Topping:

  • 2 c all-purpose flour
  • 1 c granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 12 tbsp butter chilled and grated
  • 1/2 c boiling water

For the Cinnamon Sugar Topping:

  • 1/3 c granulated sugar
  • 2 tsp ground cinnamon

Instructions
 

  1. Preheat the oven to 425°F.
  2. In a large bowl, mix sliced peaches, lemon juice, 1/2 c sugar, cinnamon, nutmeg, cornstarch, and salt. Transfer to a 9x13-inch baking dish. And bake for 10 minutes.
  3. In another bowl, combine flour, 1 c sugar, baking powder, and 1/2 tsp salt. Add grated butter. And toss to combine. Stir in boiling water. Until just combined.
  4. Remove the baking dish from the oven. And drop spoonfuls of the topping over the peach mixture.
  5. Mix the remaining sugar and cinnamon. And sprinkle over the topping. Bake for 25-30 minutes. Until golden brown and bubbly.
  6. Serve warm with vanilla ice cream.

Notes

To make this delicious Southern Peach Cobbler gluten-free. Simply substitute the all-purpose flour in the topping. With a good quality gluten-free flour blend. Look for one that’s designed for baking. And contains a mix of rice flour, potato starch, and tapioca flour. For the best texture. You might need to add a pinch of xanthan gum. To help bind the batter. If your flour blend doesn’t include it. Follow the rest of the recipe as directed. And you’ll have a scrumptious gluten-free cobbler. That’s just as good as the original.
