6 Servings

Ingredients

  • 4 cups cornbread baked and cubed
  • 1 1 oz packet Ranch seasoning
  • 1 ½ cups sour cream
  • 1 ½ cups mayonnaise
  • 2 15 oz cans pinto beans, drained and rinsed
  • 2 large tomatoes diced
  • ½ red onion diced
  • 1 cup green bell pepper chopped
  • 1 cup green onion chopped
  • 1 cup cheddar cheese grated
  • 1 lb bacon cooked and crumbled
  • 2 11 oz cans corn, drained

Instructions

Prepare the Dressing

  1. In a small bowl, combine the Ranch seasoning, sour cream, and mayonnaise. Whisk until smooth and set aside. This creamy dressing will serve as the binding element for the salad layers.

Begin the First Layer

  1. In a large trifle dish or deep glass bowl, crumble half of the cornbread evenly across the bottom. Avoid pressing down; the cornbread should remain light and fluffy.

Add Beans and Vegetables

  1. Layer half of the pinto beans on top of the cornbread, followed by half of the diced tomatoes, red onion, green bell pepper, and green onion. Spread each layer evenly for a uniform appearance.

Incorporate Cheese and Bacon

  1. Sprinkle half of the grated cheddar cheese over the vegetables. Follow with half of the crumbled bacon, ensuring even distribution for consistent flavor in each bite.

Include Corn and Dressing

  1. Scatter half of the drained corn over the bacon layer. Drizzle half of the prepared dressing over the corn, spreading gently with a spoon to ensure full coverage.

Repeat the Layers

  1. Repeat all the layers with the remaining ingredients, starting with the cornbread and finishing with the dressing. Ensure each layer is evenly applied for an aesthetically pleasing presentation.

Chill and Serve

  1. Cover the dish with plastic wrap and refrigerate for at least one hour before serving. This allows the flavors to meld together. Serve directly from the trifle dish, ensuring each portion includes all layers.

Notes

To make this recipe gluten-free, substitute the cornbread with a gluten-free cornbread mix. Ensure that the Ranch seasoning and other ingredients, such as bacon and cheese, do not contain any hidden gluten additives. These adjustments will retain the salad's delicious flavor and texture while accommodating gluten-free needs.
