4 Servings

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 large onion thinly sliced
  • 8 ounces fresh mushrooms sliced
  • 1 packet Zesty Italian dressing mix
  • 8 ounces cream cheese softened
  • 8 ounces fresh spinach
  • cups shredded mozzarella and provolone cheese blend
  • Salt and black pepper to taste

Instructions

Preheat the Oven:

  1. Set the oven temperature to 350°F (175°C) and allow it to preheat while preparing the remaining components.

Sauté the Onions:

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until they are soft and lightly caramelized, approximately 8–10 minutes.

Cook the Mushrooms:

  1. Add the sliced mushrooms to the skillet with the onions. Continue sautéing until the mushrooms are tender and their liquid has evaporated, about 5–7 minutes.

Prepare the Cream Cheese Mixture:

  1. In a mixing bowl, combine the softened cream cheese with the Zesty Italian dressing mix. Stir until smooth and well blended.

Arrange the Chicken:

  1. Lightly grease a 9x13-inch baking dish. Place the chicken breasts in the dish in a single layer. Evenly divide and spread the cream cheese mixture on top of each breast.

Sauté the Spinach:

  1. Add the fresh spinach to the skillet with the onion and mushroom mixture. Stir and cook just until the spinach is wilted, about 2–3 minutes.

Top the Chicken:

  1. Season the cream cheese-topped chicken breasts with salt and pepper. Spoon the sautéed spinach mixture over each piece of chicken.

Add Cheese and Bake:

  1. Sprinkle the shredded mozzarella and provolone cheese evenly over the top of the dish. Place the baking dish in the preheated oven and bake for approximately 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and lightly golden.
