This Smoky BBQ Chicken Grilled Cheese. Takes a classic comfort food. To the next level! Juicy, grilled chicken thighs. Slathered in BBQ sauce. Are paired with creamy mashed avocado. Ingredients

  • 1 boneless skinless chicken thigh
  • 1/4 tsp salt
  • 1/4 c BBQ sauce
  • 4 slices of sturdy white sandwich bread
  • 4 tsp unsalted butter softened
  • 2 oz. Pepper Jack cheese shredded (about 1/2 c)
  • 1/2 avocado mashed

Instructions
 

  1. Preheat your grill. Or grill pan. To medium-high heat. Season the chicken thigh. With salt. And lightly oil. The grill rack. Or brush the grill pan. With oil.
  2. Grill the chicken. Turning once. Until it's fully cooked. About 8 to 12 minutes. Allow the chicken. To rest for 5 minutes. Then shred it. With two forks. In a small bowl. Toss the shredded chicken. With barbecue sauce.
  3. On a clean surface. Lay out the bread slices. Spread softened butter. On one side of each slice. Flip the bread over. And evenly distribute the shredded chicken. On two of the slices. Sprinkle the shredded cheese. Over the chicken. Spread the mashed avocado. On the remaining slices of bread. Then close the sandwiches.
  4. In a large non-stick skillet. Over medium heat. Cook the sandwiches. Until the bottom. Is golden brown. About 3 to 5 minutes. Flip them over. Reduce the heat. To medium-low. And cook. For an additional 3 to 5 minutes. Until the cheese is fully melted. And both sides are crispy.

Notes

To make this recipe gluten-free. Simply swap out the white sandwich bread. For your favorite gluten-free bread. Be sure to check that your BBQ sauce and taco seasoning are gluten-free. As some store-bought brands. May contain gluten. The rest of the ingredients. Including the cheese, avocado, and chicken. Are naturally gluten-free. Making this an easy conversion. For those with dietary needs!
