Ingredients

  • 2 pounds chicken thighs or chicken tenderloin chunks
  • cup soy sauce
  • ½ cup brown sugar or substitute with honey
  • 1 cup pineapple juice
  • Cooked rice for serving (white or brown)

Prepare the Slow Cooker:

  1. Place the chicken thighs or tenderloin chunks into the slow cooker.

Combine Ingredients:

  1. Add the soy sauce, brown sugar, and pineapple juice. Stir well to ensure the chicken is evenly coated with the sauce mixture.

Cooking Process:

  1. Set the slow cooker to the low setting and cook for 6–8 hours, allowing the chicken to absorb the flavors and become tender.

Serve:

  1. Once cooked, serve the chicken over prepared white or brown rice. Spoon additional sauce from the slow cooker over the chicken for enhanced flavor.

Notes

To make this recipe gluten-free, replace the soy sauce with gluten-free tamari or coconut aminos. Ensure the brown sugar and pineapple juice are labeled gluten-free, as cross-contamination can occur during processing.
