Instructions
Prepare the Pork Chops
Begin by heating the olive oil in a skillet over medium-high heat. Lightly season the pork chops with salt and pepper, then sear them for approximately 2–3 minutes on each side until golden brown. Remove from the skillet and set aside.
Prepare the Potatoes
Chop the potatoes into bite-sized pieces and place them evenly in the bottom of the slow cooker. If using, add chopped carrots and celery for added flavor and nutrients.
Create the Sauce
Pour the cream of chicken soup and chicken stock over the potatoes. Sprinkle in the thyme, parsley, granulated onion, granulated garlic, and celery seed. Gently stir to ensure the potatoes are evenly coated with the sauce and seasonings.
Add the Pork Chops
Place the seared pork chops on top of the potato mixture in the slow cooker. Cover the slow cooker with its lid to lock in the moisture and flavors.
Slow Cook
Set the slow cooker to high for 3–4 hours or low for 6–8 hours. During this time, the pork chops will become tender, and the potatoes will absorb the flavorful sauce.
Thicken the Sauce (Optional)
If a thicker sauce is desired, remove approximately ½ cup of the cooking liquid 30 minutes before the cooking time ends. Whisk this liquid with 2 teaspoons of cornstarch, then return it to the slow cooker and stir gently.
Serve
Once the cooking is complete, transfer the pork chops and potatoes to serving plates. Spoon additional sauce over the top and serve hot.
