4 Servings

Ingredients

  • 4 boneless pork chops
  • 1 large white or yellow onion chopped
  • ½ cup pure maple syrup
  • cup Dijon mustard
  • 1 tablespoon olive oil or butter optional, for searing
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Instructions

Optional: Sear the pork chops.

  1. For added flavor and texture, heat the olive oil or butter in a skillet over medium-high heat. Season the pork chops with salt and pepper, then sear for approximately 3 minutes per side until golden brown. Remove from heat and set aside.

Prepare the slow cooker base.

  1. Scatter the chopped onion evenly over the bottom of the slow cooker.

Make the sauce.

  1. In a medium bowl, whisk together the maple syrup and Dijon mustard until fully combined. If the pork chops were not seared, season them now with salt and pepper.

Coat the pork chops.

  1. Add the pork chops to the maple-Dijon mixture, turning to coat thoroughly.

Assemble and cook.

  1. Arrange the coated pork chops on top of the onions in the slow cooker. Pour any remaining sauce over the top. Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours, until the pork is fully cooked and tender.

Serve.

  1. Taste and adjust seasoning with additional salt and pepper if needed. Serve warm, drizzled with the sauce from the slow cooker.
