Ingredients

  • 1/3 c olive oil
  • 1 1/2 c finely torn ciabatta bread
  • 2 cloves garlic minced
  • Kosher salt to taste

For the spaghetti:

  • 1 lb spaghetti
  • 1/2 c olive oil
  • Zest of 1 lemon
  • 1/2 c lemon juice
  • 3/4 c freshly grated Parmesan cheese
  • 2 tbsp butter
  • Crushed red pepper flakes to taste
  • Kosher salt and black pepper to taste
  • Fresh basil and extra Parmesan cheese for serving

Instructions
 

Make the breadcrumbs:

  1. Heat olive oil in a skillet over medium heat.
  2. Add ciabatta bread and stir until golden.
  3. Mix in minced garlic and cook for 1 minute. Season with salt and set aside.

Cook the spaghetti:

  1. Boil a large pot of salted water.
  2. Cook spaghetti until al dente. Save 1 cup of pasta water, then drain.

Prepare the lemon sauce:

  1. In a bowl, whisk together olive oil, lemon zest, lemon juice, and Parmesan.

Combine and serve:

  1. Return spaghetti to the pot.
  2. Pour lemon sauce over spaghetti, add butter, and toss until well coated.
  3. If needed, add up to 1/4 cup of reserved pasta water to adjust consistency.
  4. Season with red pepper flakes, salt, and pepper.
  5. Serve in bowls, topped with fresh basil, extra Parmesan, and toasted breadcrumbs. Enjoy immediately!
