Ingredients

  • 2 cups shredded chicken
  • 4 celery sticks chopped or sliced
  • 1 cup baby carrots
  • 2 green bell peppers chopped
  • 1 can 15 oz sliced white potatoes, drained
  • 1 can 14.5 oz fire-roasted tomatoes
  • 5 garlic cloves crushed
  • ¼ cup fresh parsley chopped
  • Salt and pepper to taste
  • 6 cups water
  • 8 ounces ditalini pasta

Instructions
 

Prepare the base

  1. Place the shredded chicken, water, potatoes, carrots, peppers, tomatoes, garlic, salt, and pepper into the crockpot. Stir gently to combine the ingredients.

Cook the soup

  1. Set the crockpot to low heat and cook for approximately 4 hours, allowing the flavors to meld and the vegetables to soften.

Prepare the pasta

  1. While the soup finishes cooking, prepare the ditalini pasta according to the package directions. Drain well once fully cooked.

Combine and finish

  1. Add the cooked pasta to the crockpot. Stir to incorporate, then adjust seasonings with additional salt and pepper as needed. Garnish with fresh parsley before serving.

Notes

To prepare this Sicilian Style Chicken Soup gluten free, substitute the ditalini pasta with a certified gluten-free pasta of similar size and shape. Ensure canned potatoes, tomatoes, and seasonings are labeled gluten free, as cross-contamination may occur with some brands.
