These Savory Iowa Party Bites are the ultimate crowd-pleaser! Crispy tortilla scoops are filled with a rich, cheesy mix of cream cheese, mozzarella, sweet corn, and a hint of green chiles for a little kick. They’re baked to perfection, with bubbling cheese and a golden parmesan crust on top. Ingredients

  • 1 10-ounce bag of Tostitos Scoops tortilla chips
  • 1 8-ounce block of softened cream cheese
  • 8 ounces of shredded mozzarella
  • 1 large egg
  • 1 15-ounce can of sweet corn, drained
  • 1 4-ounce can of mild or medium green chiles
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 c grated parmesan for topping

Instructions
 

  1. Preheat your oven to 425°F.
  2. Lightly grease two baking sheets or line them with parchment paper for easy cleanup. Arrange the tortilla scoops on the sheets, making sure they’re all cup-side up and packed tightly so none of the filling spills out.
  3. In a large bowl, mix together the softened cream cheese, shredded mozzarella, egg, corn, green chiles, garlic powder, salt, and pepper. Mix everything together until it’s smooth and well blended.
  4. Scoop about 1 tablespoon of the filling into each tortilla chip, being careful not to overfill. Then, sprinkle a little parmesan cheese on top of each one.
  5. Pop the trays in the oven and bake for 13-15 minutes, until the cheese is bubbly and the tops are starting to brown.
  6. Serve them warm and enjoy every cheesy bite!

Notes

Good news—this recipe can easily be made gluten-free! Just swap out the regular tortilla scoops for gluten-free tortilla chips (there are plenty of options out there). Double-check your canned ingredients like corn and chiles to ensure they’re labeled gluten-free, but everything else should be naturally gluten-free. You’ll still get that same cheesy, crunchy goodness without the gluten, and no one will even know the difference!
