  • 1.4 pound chicken thighs boneless, skinless

  • 2 medium yellow peaches thoroughly washed, cored, and sliced
  • 3 tbsp honey or more
  • ½ lemon freshly squeezed
  • 2 tbsp butter

Instructions
 

  1. Prepare the Chicken: Season the chicken thighs with chili powder, Italian seasoning, salt, and pepper.
  2. Cook the Chicken: Heat olive oil in a skillet. Over medium heat. Add the chicken thighs. And cook for 5 minutes. Without moving them to let them sear. Flip them over. Reduce the heat to low-medium. And cook for another 5 minutes. Or until fully cooked. Remove the chicken from the skillet.
  3. Prepare the Peaches: In the same skillet. Add sliced peaches. Cook for about 5 minutes. Until they start to soften. Add honey, lemon juice, and butter. Stirring to combine. And coat the peaches in the sauce.
  4. Combine and Serve: Nestle the chicken thighs back into the skillet with the peaches. Let everything heat through briefly. Remove from heat. Garnish with fresh thyme. And serve hot.
