Ingredients

  • 8 oz ground hot Italian sausage
  • 1/2 orange bell pepper diced
  • 1/2 red bell pepper diced
  • 2 c baby spinach
  • 1 c cheddar cheese
  • 1/2 c milk
  • 12 large eggs
  • Thinly sliced chives to garnish
  • Salt and pepper to taste

Instructions
 

  1. Preheat Oven and Skillet: Start by preheating your oven to 350°F. Heat 2 tbsp of olive oil in an ovenproof skillet. Over medium-high heat.
  2. Cook Sausage: Add the 8 oz of ground hot Italian sausage to the skillet. Breaking it into small pieces. Cook for 6 to 8 minutes. Until fully cooked.
  3. Sauté Vegetables: Add 1/2 diced orange bell pepper and 1/2 diced red bell pepper. Cook for about 4 minutes. Until they soften. Then, add 2 c of baby spinach. And cook for another 2-3 minutes until wilted. Season with salt and pepper.
  4. Prepare Egg Mixture: In a large bowl, beat 12 large eggs with 1/2 c of milk and 3/4 c of cheddar cheese. Whisk until smooth.
  5. Combine and Cook: Pour the egg mixture over the sausage and vegetables in the skillet. Cook for about 3 minutes on medium heat. Until the edges begin to set.
  6. Bake Frittata: Sprinkle the remaining 1/4 c of cheddar cheese on top. Transfer the skillet to the oven. And bake for 20 minutes. Or until the center is set.
  7. Garnish and Serve: Remove from oven. Let it cool slightly. Garnish with thinly sliced chives. And serve immediately. Enjoy!
