Ingredients

Seasonings:

  • 1 tsp dried basil
  • 1/2 tsp dried parsley
  • 1/2 tsp dried oregano
  • 1/2 tsp ground mustard
  • 1/4 tsp black pepper

Soup Ingredients:

  • 1 pound ground Italian sausage hot or mild
  • 2 tbsp butter
  • 1 yellow onion finely diced
  • 1/2 c carrots diced
  • 2 celery ribs diced
  • 3 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 1 tsp soy sauce
  • 1 tsp hot sauce
  • 5 c chicken broth
  • 1 c heavy cream
  • 1 1/4 pounds red potatoes about 6 small, cut into cubes
  • 2 c shredded cheddar cheese optional

Garnish:

  • Red pepper flakes
  • Fresh parsley

Instructions
 

  1. Prepare the Sausage: If you're using sausage links. Remove the casings. Heat a large pot. Over medium heat. Add the sausage. Breaking it into small pieces. As it cooks. Continue cooking. Stirring occasionally. Until the sausage is fully browned. About 10-12 minutes. Set the cooked sausage aside. Reserving 1 tablespoon of the drippings. In the pot. If needed, add butter. To make up the difference.
  2. Sauté Vegetables: To the reserved drippings. Add 2 tablespoons of butter. And melt over medium heat. Add the diced onions, celery, and carrots. Cooking for about 5 minutes. Until they begin to soften. Stir in the minced garlic. And cook. For another minute.
  3. Build the Soup Base: Sprinkle the flour. Over the sautéed vegetables. And stir well. Cooking for 2 minutes. To eliminate the raw flour taste. Gradually pour in the chicken broth. Stirring constantly to deglaze the pot. And incorporate the browned bits from the bottom. Enhancing the flavor. Slowly mix in the heavy cream, hot sauce, soy sauce, and seasoning blend.
  4. Simmer the Soup: Increase the heat. To bring the mixture to a boil. Then reduce it to a simmer. Clean and dice the potatoes. Into 1-inch cubes. Then add them to the pot. Let the soup simmer uncovered. For 20-25 minutes. Or until the potatoes are tender.
  5. Combine and Serve: Return the cooked sausage to the pot, stirring to combine. If desired, reduce the heat to low. And mix in the shredded cheddar cheese. Until melted and smooth. Serve the soup hot. Garnished with red pepper flakes. And fresh parsley.
