Roquefort and Walnut Puff Pastry Rolls

Ingredients

  • 1 sheet puff pastry approximately 11 x 14 inches, thawed
  • 3 ounces Roquefort cheese softened to room temperature
  • 2 to 4 tablespoons heavy double cream
  • ½ cup walnuts finely chopped
  • 2 tablespoons fresh rosemary minced

Instructions
 

Preheat and Prepare Baking Sheets:

  1. Preheat the oven to 400°F (200°C). Line two large baking sheets with parchment paper and set aside.

Roll and Divide Puff Pastry:

  1. On a lightly floured surface, roll the thawed puff pastry to approximately ¼ inch thickness. Using a sharp knife or pastry cutter, divide the sheet lengthwise into two equal rectangles.

Prepare the Cheese Filling:

  1. In a medium-sized bowl, combine the Roquefort cheese with 2 tablespoons of cream. Mix until smooth and spreadable, adding additional cream if necessary to achieve a paste-like consistency.

Assemble the Rolls:

  1. Spread half of the Roquefort mixture evenly over one puff pastry rectangle, leaving a ¼ inch margin around the edges. Sprinkle evenly with half of the chopped walnuts and half of the minced rosemary. Starting from the long edge, gently roll the pastry into a log. Pinch the seam to seal securely. Repeat the process with the second pastry half and remaining ingredients.

Slice and Freeze:

  1. Using a sharp knife, slice each log into ½-inch thick rounds. Arrange the slices on the prepared baking sheets, leaving about 1 inch of space between each. Transfer the baking sheets to the freezer for 15 minutes to firm up the pastry before baking.

Bake:

  1. After chilling, remove the baking sheets from the freezer and place them directly into the preheated oven. Bake for 12 to 15 minutes, or until the rolls are golden brown and puffed.

Cool and Serve:

  1. Allow the rolls to cool on the baking sheet for 10 minutes before serving. Serve warm or at room temperature.

Notes

To prepare this recipe gluten-free, substitute the standard puff pastry with a certified gluten-free puff pastry. Ensure all other ingredients (including Roquefort and cream) are also verified gluten-free, as some cheese brands may include additives or mold cultures containing gluten. Adjust handling gently, as gluten-free pastry is typically more delicate when rolling and slicing.
