All you need is a squash, a little brown sugar, and a bit of butter, and you’re on your way to something cozy and delicious. As it roasts, the butter and brown sugar melt into this amazing, caramel-like glaze that fills the center of the squash, making each bite soft, a bit sweet, and totally satisfying. Ingredients

  • 1 medium acorn squash cut in half and seeds scooped out
  • 2 tbsp brown sugar
  • 1 tbsp butter

Instructions
 

  1. First, get all your ingredients together.
  2. Preheat your oven to 350°F (175°C).
  3. Set the acorn squash halves cut-side down on a baking sheet. Pop them in the oven and allow them to bake for about 30-45 minutes, until the flesh begins to soften up.
  4. Take the squash out of the oven, and carefully move one half (cut-side up) to a deep baking dish. Add the butter and brown sugar to the hollowed center. Place the other half on top, cut-side down, to "seal" in the filling.
  5. Set the dish back in the oven and bake for another 30 minutes, or until the squash is soft and tender.
  6. Serve it hot and appreciate every cozy bite!

Good news—this recipe is naturally gluten-free, so no special swaps are needed! Just check that your brown sugar and butter are labeled gluten-free if you’re sensitive to cross-contamination, and you’re good to go.
