Ingredients

  • 2 large eggs
  • 2/3 c unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla or coffee extract I used Nielsen Massey's Coffee Extract
  • 1/2 c unsalted butter
  • 1 c sugar
  • 3/4 c + 2 tablespoons all-purpose flour
  • 1 milk chocolate bar about 3.3 ounces; I used Dove
  • 1 dark chocolate bar about 3.3 ounces; I used Dove
  • 5-7 strawberries sliced thin

Instructions
 

  1. Start by preheating your oven to 350°F. Grab a 9x9 inch baking pan, line it with parchment paper or foil, and give it a good spray with non-stick spray—no one likes a brownie stuck to the pan!
  2. In a microwave-safe bowl, combine the butter and sugar, then microwave in 30-second bursts. Stir in between until the butter is fully melted, which should take about a minute. Now, whisk in the eggs, baking powder, salt, and your choice of vanilla or coffee extract.
  3. Once that's mixed, stir in the cocoa powder and flour until everything’s well combined and smooth—no lumps allowed! Then comes the fun part: folding in those chunks of milk and dark chocolate.
  4. Pour that rich, chocolatey batter into your prepared pan, and sprinkle the sliced strawberries on top. Pop it in the oven and bake for about 22-25 minutes, or until a toothpick poked in the center comes out with just a few moist crumbs (you want them fudgy, not overbaked!).
  5. Let them cool a bit, or dive in while they’re still warm—it’s up to you!

Notes

If you need to make these brownies gluten-free, don’t worry—it’s simple! Just swap out the regular all-purpose flour for a good quality gluten-free flour blend that’s designed for baking. I’d recommend using one with xanthan gum to help keep the texture just right. Also, double-check your baking powder and chocolate bars to make sure they’re gluten-free. Same delicious result, but without the gluten! Easy peasy, right?
