Ingredients

For the Brownies

  • 4 oz 120 g bittersweet chocolate broken into pieces
  • ½ cup 115 g unsalted butter
  • ¾ cup 150 g granulated sugar
  • 2 large eggs at room temperature
  • 2 teaspoons pure vanilla extract
  • cup 85 g all-purpose flour
  • 1 teaspoon instant espresso powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup 85 g fresh raspberries halved
  • ¼ cup 85 g raspberry jelly

Instructions
 

Prepare the Baking Dish

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking dish with parchment paper, ensuring there is an overhang for easy removal.

Melt the Chocolate and Butter

  1. In a microwave-safe bowl, combine the chocolate and butter. Heat at 50% power for 1 minute, then stir. Continue heating in 30-second intervals at 50% power, stirring between each round, until the mixture is fully melted and smooth.

Incorporate Sugar

  1. Stir the granulated sugar into the warm chocolate mixture until well combined.

Add Eggs and Vanilla

  1. Add the eggs and vanilla extract, mixing until the batter becomes cohesive and glossy.

Add Dry Ingredients

  1. Add the flour, espresso powder, baking powder, and salt. Mix gently until just combined, being careful not to overmix, as this may result in dry or dense brownies.

Assemble the Batter

  1. Pour the batter into the prepared baking dish. Drop spoonfuls of raspberry jelly onto the surface and use a knife to swirl it through the batter. Sprinkle the halved raspberries evenly across the top.

Bake the Brownies

  1. Bake for 20 minutes, then test for doneness by inserting a toothpick halfway between the center and the edge. If it emerges covered in wet batter, bake for an additional 2 minutes and test again. The brownies are ready when the toothpick comes out with a few moist crumbs. Total baking time should not exceed 25 minutes.

Cool and Serve

  1. Allow the brownies to cool completely on a wire rack before lifting them from the pan and slicing.
