This Refreshing White Chocolate Lemon Bark is a perfect mix of creamy, sweet white chocolate and the bright, tangy kick of lemon drop candies. It’s ridiculously easy to make and looks so pretty with the little bits of lemon drops scattered throughout. Plus, it’s one of those treats that feels fancy, but really, it only takes about 10 minutes of hands-on time! Whether you’re making it for a party, a gift, or just to snack on at home, this bark is sure to hit the spot with its refreshing flavor and satisfying crunch.

Ingredients

  • 1 11.5 ounces bag of white chocolate (make sure it has cocoa butter for that smooth melt)
  • 1/2 c lemon drop candies crushed for that perfect zesty crunch

Instructions
 

  1. Start by lining a 9x9-inch pan with some parchment paper and set it aside for later.
  2. Take about two-thirds of the lemon drop candies and toss them into a ziplock bag. Grab a rolling pin (or whatever heavy tool you’ve got) and gently crush them into small bits. Then, in a separate bag, lightly crush the rest of the candies into larger chunks—these will be for the topping.
  3. Next, place your white chocolate in a microwave-safe bowl. Microwave in 30-second bursts, giving it a stir between each round, until the chocolate is completely melted and smooth.
  4. Once melted, stir in the smaller crushed lemon drops, mixing it all together. Then, pour the mixture into your prepared pan, spreading it out evenly. Top it off with the larger lemon drop chunks for a little extra crunch and visual flair.
  5. Pop the pan in the fridge to chill until the bark is firm. Once hardened, break it into portions and enjoy!

Notes

To make this recipe gluten-free, all you need to do is double-check your ingredients. Most white chocolate is gluten-free, but make sure the one you’re using doesn’t contain any added gluten. As for the lemon drop candies, be sure they’re gluten-free too—most are, but always check the label. With those easy swaps, you’ll have a gluten-free treat that everyone can enjoy without worry!
