Ingredients

  • 1 lb chicken thighs
  • ¼ cup adobo sauce from a can of chipotle peppers in adobo sauce
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 lime cut into wedges (for serving)

Prepare the Marinade

  1. In a blender or food processor, combine adobo sauce, red onion, cilantro, Italian seasoning, salt, black pepper, and olive oil. Blend until a smooth marinade forms.

Marinate the Chicken

  1. Place the chicken thighs in a large bowl or resealable plastic bag. Pour the prepared marinade over the chicken, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 30 minutes, or preferably overnight for a deeper flavor.

Preheat and Grill the Chicken

  1. Preheat a grill or grill pan over medium-high heat. Lightly grease the surface with a high-heat cooking spray or additional olive oil.
  2. Remove the marinated chicken from the refrigerator and place it on the grill. Allow it to sear without moving for approximately 7-8 minutes. Once the chicken lifts easily, flip and cook for an additional 7-8 minutes, or until the internal temperature reaches 160°F and the juices run clear.

Rest and Serve

  1. Transfer the grilled chicken to a plate and let it rest for 5 minutes to allow the juices to redistribute. Serve with a fresh lime wedge, and enjoy it in tacos, burrito bowls, salads, or as a standalone dish.

Notes
