Pumpkin Oatmeal Chocolate Chip Cookies

Ingredients

  • 1/2 c light brown sugar packed
  • 3/4 c or 1 1/2 sticks salted butter, softened
  • 1 c canned pumpkin puree
  • 1 1/2 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 2 c quick-cooking oats
  • 1 c all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 1/2 c chocolate morsels

Instructions
 

  1. Preheat your oven to 350°F. Line a cookie sheet, using parchment paper.
  2. Using a mixer combine the butter and brown sugar until creamy.
  3. Add the eggs one at a time mixing after each addition. Then incorporate the pumpkin puree and vanilla extract.
  4. In a bowl whisk together cinnamon, cloves, nutmeg, oats, flour, baking powder and salt.
  5. Gradually add this dry mixture to the wet ingredients while blending until everything is well combined.
  6. Gently stir in the chocolate morsels.
  7. Place spoonfuls of dough onto the cookie sheet with space between each one.
  8. Bake for 12 minutes. Until the cookies turn a lovely golden brown color.
  9. Allow them to cool on a wire rack before serving.

Notes

If you're trying to avoid gluten but still want to enjoy these treats you're, in luck! Instead of using flour simply use an equal amount of gluten-free flour blend (make sure it has xanthan gum included as it helps with binding). Also be careful when choosing your oats; although oats are naturally gluten-free they can sometimes be contaminated with grains that contain gluten. Look for oats that are labeled as "gluten-free" to make sure they're safe. With these substitutions you'll still get to savor the delight of our Pumpkin Oatmeal Chocolate Chip Cookies without the gluten.
