Poor Man Husband Casserole

A simple and hearty Poor Man Husband Casserole made with ground beef, rice, corn, tomato sauce, and cheddar cheese. Quick, budget-friendly, and perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • Salt and pepper to taste
  • 1 8-ounce can tomato sauce
  • 1 ½ cups cooked rice
  • 1 4-ounce can corn, drained
  • 1 ½ cups shredded cheddar cheese

Instructions
 

Prepare the Ground Beef Mixture:

  1. In a large skillet, cook the ground beef over medium heat. Add the chopped onion, minced garlic, and a pinch of salt and pepper. Cook until the beef is browned and the onions are softened, stirring occasionally.

Drain the Excess Fat:

  1. Once the beef is fully cooked, drain any excess fat from the skillet to avoid a greasy casserole.

Combine the Ingredients:

  1. Stir the cooked rice, drained corn, and tomato sauce into the skillet. Mix thoroughly until all the ingredients are evenly combined and coated in the sauce.

Add the Cheese Topping:

  1. Sprinkle the shredded cheddar cheese evenly over the top of the mixture. Ensure the cheese covers the entire surface for a gooey, melty finish.

Melt the Cheese:

  1. If using an oven-safe skillet, transfer the casserole to the oven and bake at 350°F (175°C) for approximately 5 minutes, or until the cheese is melted and bubbly. If you do not have an oven-safe skillet, cover the skillet with a lid and cook on low heat until the cheese melts.

Serve:

  1. Remove the casserole from the heat and allow it to cool slightly before serving. Serve warm and enjoy with your choice of sides.
