Ingredients

  • 1 cup dark chocolate chopped
  • ½ cup unsalted butter
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 3 large eggs
  • ¾ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • 1 cup pistachios chopped

Instructions

Preheat the Oven:

  1. Preheat the oven to 350°F (180°C). Line an 8×8 inch (20×20 cm) square baking pan with parchment paper, ensuring an overhang for easy removal of the brownies.

Melt Chocolate and Butter:

  1. In a microwave-safe bowl, combine the chopped dark chocolate and unsalted butter. Heat in 20-second intervals, stirring between each session, until the mixture is fully melted and smooth. Set aside to cool slightly.

Prepare the Egg and Sugar Mixture:

  1. In a separate large mixing bowl, combine the eggs, light brown sugar, and granulated sugar. Beat with an electric mixer on medium speed for 1–2 minutes, or until the mixture becomes pale and slightly frothy.

Combine Wet Ingredients:

  1. Slowly pour the melted chocolate mixture into the egg-sugar mixture, stirring until well incorporated.

Incorporate Dry Ingredients:

  1. Sift the flour, cocoa powder, and salt together. Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon until no dry streaks remain.

Add Pistachios:

  1. Gently fold in the chopped pistachios until evenly distributed throughout the batter.

Bake:

  1. Transfer the batter to the prepared baking pan and smooth the top. Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.

Cool and Serve:

  1. Allow the brownies to cool in the pan for 10–15 minutes before transferring them to a wire rack. Once completely cooled, cut into squares and serve.
