Ingredients

  • 1 pastry for a 9 inch single crust pie
  • 1 15 oz can pitted sour cherries, drained
  • 2 tbsp quick-cooking tapioca
  • ½ c white sugar
  • tsp almond extract

Instructions
 

  1. Preheat the Oven: Set your oven to 400 degrees F (200 degrees C).
  2. Prepare the Crust: Roll out your pie crust and use a cutter to make two 6-inch rounds. Cut the remaining dough into 1/8-inch strips for the lattice top. Press the rounds into two 5-inch mini pie dishes.
  3. Make the Filling: In a mixing bowl, combine the drained cherries, tapioca, sugar, and almond extract. Let this mixture sit for about 5 minutes to allow the tapioca to soften. Give it another stir and then evenly distribute it into the pie shells.
  4. Assemble the Lattice: Weave the dough strips over the top of the filling to form a lattice. Press the edges to seal.
  5. Bake: Place the pies in the oven and bake until the crust is golden and the filling is bubbly about 30 minutes.
  6. Cool and Serve: Allow the pies to cool a bit before serving to let the filling set.
