A comforting pasta soup made with beef broth, vegetables, and tender alphabet noodles. Perfectly simple and family-friendly, this cozy one-pot meal is ideal for chilly days or quick weeknight dinners.

Ingredients

  • 1 medium carrot thinly sliced
  • 1 stalk celery sliced
  • ½ medium onion finely diced
  • 2 cloves garlic minced
  • 5 cups beef broth
  • 1 cup water
  • 14 ounces canned diced tomatoes with juices
  • 1 medium potato peeled and diced
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup uncooked alphabet pasta

Instructions
 

Sauté the vegetables:

  1. In a large soup pot set over medium heat, add a small amount of oil. Once hot, add the sliced carrot, celery, diced onion, and minced garlic. Cook, stirring occasionally, until the onion becomes translucent and fragrant, approximately 5 minutes.

Incorporate the liquids and seasonings:

  1. Pour in the beef broth and water. Stir in the diced tomatoes (with their juices), tomato paste, diced potato, Italian seasoning, and desired amount of salt and pepper. Combine thoroughly. Bring the mixture to a gentle boil.

Simmer until tender:

  1. Reduce the heat to low and allow the soup to simmer uncovered for approximately 15–20 minutes, or until the potatoes are fork-tender.

Add the pasta:

  1. Stir in the uncooked alphabet pasta. Continue cooking for an additional 8–10 minutes, or until the pasta is al dente and fully cooked through. Stir occasionally to prevent sticking.

Serve warm:

  1. Once the pasta has reached the desired texture, remove the pot from heat. Taste and adjust seasoning if necessary. Ladle the soup into bowls and serve hot, ideally with warm bread or crackers on the side.

Notes

To make this pasta soup gluten-free, substitute the traditional alphabet pasta with a certified gluten-free small pasta variety such as gluten-free ditalini, elbows, or shells. Additionally, confirm that your beef broth, tomato paste, and all canned goods are labeled gluten-free, as some may contain hidden additives. Cooking times may vary slightly with alternative pasta types, so monitor texture closely near the end of cooking.
