Crispy, golden-baked Parmesan Chicken Bites made with tender chicken breast, parmesan cheese, butter, panko, and Italian breadcrumbs. A flavorful, oven-baked appetizer or entrée everyone will enjoy.

Ingredients

  • 3 boneless skinless chicken breasts, cut into 1x2-inch nugget-sized portions
  • ½ cup unsalted butter melted
  • 1 teaspoon garlic powder
  • ½ cup grated Parmesan cheese
  • ½ cup Italian-seasoned breadcrumbs
  • ½ cup panko breadcrumbs

Instructions
 

Prepare the Chicken:

  1. Begin by slicing the chicken breasts into uniform nugget-sized pieces, approximately 1 inch by 2 inches in dimension, ensuring even cooking.

Combine Dry Ingredients:

  1. In a shallow mixing bowl, combine the grated Parmesan cheese, Italian-seasoned breadcrumbs, panko breadcrumbs, and garlic powder. Stir until the mixture is evenly blended.

Melt the Butter:

  1. In a separate shallow dish, melt the butter using the microwave or stovetop. This will act as the adhesive for the breadcrumb mixture.

Coat the Chicken:

  1. Dip each chicken piece into the melted butter, ensuring it is fully coated, then press into the breadcrumb mixture. Ensure all sides are thoroughly covered. Gently press the coating onto the chicken if needed to help it adhere.

Bake the Chicken Bites:

  1. Arrange the coated chicken pieces on a parchment-lined or lightly greased baking sheet. Space them evenly for proper air circulation. Bake in a preheated oven at 400°F (204°C) for 25–30 minutes or until the internal temperature of the chicken reaches 165°F (74°C) and the exterior is golden and crisp.

Serve:

  1. Remove from the oven and allow to rest for 2–3 minutes. Serve warm with preferred dipping sauces or side dishes.

Notes

To prepare this recipe gluten-free, substitute the Italian-seasoned breadcrumbs and panko breadcrumbs with certified gluten-free versions of each. Ensure the Parmesan cheese and other ingredients used are also labeled gluten-free to avoid cross-contamination.
