Pancake Mix Donuts

These oven-baked pancake mix donuts are a quick and delightful treat made with pantry staples like pancake mix, eggs, milk, butter, and vanilla. Glazed to perfection and ready in minutes, they’re an easy alternative to traditional fried donuts.

Ingredients

Donuts:

  • 2 cups buttermilk pancake mix e.g., Bisquick or Krusteaz
  • ½ cup granulated sugar
  • 2 large eggs
  • ¾ cup whole milk
  • 3 tablespoons unsalted butter melted
  • 1 tablespoon vanilla extract
  • ¼ cup mix-ins e.g., mini chocolate chips – optional

Vanilla Glaze:

  • cups powdered sugar
  • 2 –3 tablespoons milk
  • 2 teaspoons vanilla extract

Instructions
 

Preheat the Oven:

  1. Set the oven to 325°F (160°C). Lightly grease a 12-count donut pan (or two 6-count pans) with nonstick cooking spray. Set aside.

Combine Dry Ingredients:

  1. In a large mixing bowl, whisk together the pancake mix and granulated sugar until thoroughly incorporated.

Mix Wet Ingredients:

  1. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract until well blended.

Combine Wet and Dry Ingredients:

  1. Gently stir the wet mixture into the dry ingredients until mostly combined. If using mix-ins such as chocolate chips or fruit, fold them in at this stage. Avoid overmixing to maintain a light texture.

Fill the Donut Pan:

  1. Spoon or pipe the batter into the prepared donut pans, filling each cavity approximately ¾ full for optimal rise.

Bake:

  1. Place in the preheated oven and bake for 9–11 minutes, or until the donuts are lightly golden and spring back when touched.

Cool:

  1. Remove from the oven and allow the donuts to cool in the pan for 2–3 minutes. Then, transfer them to a wire rack to cool completely.

Prepare the Glaze:

  1. In a medium bowl, whisk together the powdered sugar, 2 tablespoons of milk, and vanilla extract until smooth. Adjust the consistency by adding more milk for a thinner glaze or additional sugar for a thicker one.

Glaze the Donuts:

  1. Once the donuts are completely cool, dip the tops into the glaze. Allow any excess to drip off before placing them back on the wire rack. Let the glaze set for approximately 15 minutes before serving.

Notes

Substitute the standard pancake mix with a certified gluten-free buttermilk pancake mix. Ensure your mix-ins (such as chocolate chips or sprinkles) and all other ingredients are also gluten-free by checking product labels. You may also add ½ teaspoon baking powder for additional lift if your gluten-free mix lacks leavening agents.
