Servings

Ingredients

For the Rolls:

  • 8 ounces feta cheese crumbled
  • 2 tablespoons fresh dill chopped
  • 1 clove garlic grated
  • 18 sheets phyllo dough thawed
  • 1 tablespoon extra-virgin olive oil plus more for brushing

For the Chili Honey:

  • 1 tablespoon salted butter
  • 1 ½ teaspoons chili flakes
  • ½ teaspoon cumin seeds
  • cup honey

Instructions

Prepare the Oven and Baking Sheet:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and even baking.

Mix the Filling:

  1. In a mixing bowl, combine the crumbled feta cheese, chopped dill, and grated garlic until well blended. Set aside.

Assemble the Rolls:

  1. Lay one sheet of phyllo dough flat on a clean surface. Fold it in half lengthwise.
  2. Lightly brush the edges of the folded dough with olive oil.
  3. Place a spoonful of the feta mixture at one end of the phyllo sheet. Roll the dough tightly, folding in the sides as you go to form a sealed roll.
  4. Place the roll seam-side down on the prepared baking sheet. Repeat with the remaining phyllo sheets and filling.

Bake the Rolls:

  1. Lightly brush the tops of the assembled rolls with olive oil. Bake for 20 minutes, or until the rolls are golden brown and crispy.

Prepare the Chili Honey:

  1. While the rolls are baking, melt the butter and olive oil in a small saucepan over medium heat. Add the chili flakes and cumin seeds, stirring until fragrant (approximately 1 minute). Remove from heat and stir in the honey until fully combined.

Serve:

  1. Remove the rolls from the oven and allow them to cool slightly. Drizzle the warm rolls with the prepared chili honey or serve the honey on the side as a dipping sauce.
